6 Quick, Easy, and Healthy Snacks!

Thanks to everyone who joined Doc Indie Jones and I on our Live Talk Tuesday Show! We dished up some healthy snacks to give you a boost of Antioxidants and help reduce daily stress! These snacks can all be made in less than 5 minutes of prep time and the kids will also love them! So let's get to snacking!


KZ Cleanse Smoothie:

Ingredients:

*1/2 Cup of unsweetened Almond, Cashew, or Coconut Milk

*1 cup of Coconut Water (preferably Organic and Non-GMO)

*1/2 an Avocado

*1 cup Blueberries

*1 generous handful of Spinach

*1/4 tsp Vanilla Extract

*2-3 squirts of Organic Stevia or Monk Fruit Sweetener

*Cup to 1 cup of ice

Instructions: Blend all ingredients in a Nutibullet or Blender and Enjoy!


Sweet Potato Rounds:

Ingredients:

*12 ounces sweet potatoes (washed and dried)

*2 teaspoons Avocado Oil or melted Coconut Oil

*1 teaspoon ground cinnamon

*2 teaspoons Raw Honey

Instructions:

Preheat oven to 425°F. Slice the sweet potatoes into ½-inch rounds. Place rounds on a roasting pan or rimmed cookie sheet on parchment paper. Brush each sweet potato slice with oil and sprinkle with cinnamon. Flip slices over and repeat. Roast sweet potato slices for 10 minutes. Remove the pan and carefully flip the rounds with a fork or spatula. Return to the oven and cook for an additional 8 to 10 minutes until golden and caramelized. Serve rounds plain or with your favorite toppings. Doc Indie and I topped with Organic Coconut Yogurt and Pomegranate seeds, Yummmm!

Notes

For the best rounds look for thinner sweet potatoes that are an even width.

Have fun and experiment with different seasonings and toppings. Try olive oil with chipotle powder or garlic salt for a more savory snack!


Roasted Chile/Lime/Turmeric Cashews:



Ingredients:

*1 pound raw cashews

*1 tablespoon olive oil

*½ tablespoon lime zest

*1 teaspoon turmeric powder

*⅛ teaspoon cayenne pepper

*¼ teaspoon kosher salt

*1 tablespoon fresh lime juice

Instructions:

Place raw cashews on a lined baking sheet.

Preheat oven to 400F.

Roast nuts in the oven for about 7 minutes. You will be able to smell the nuts when they are done. Be sure not to overcook!

While the nuts are roasting, mix all the other ingredients in a small cup and stir to combine.

When cashews are done, place nuts in a heat-proof bowl.

Stir in the oil mixture and toss to coat evenly.

Place coated cashews back on the baking sheet and toast for 1 more minute to dry the mixture.

Let cool for 30 minutes.


Cinnamon and Honey Roasted Almonds:

Ingredients:

*2 cups whole raw almonds

*1 tablespoon avocado oil, avocado oil, or melted coconut oil

*1 tablespoon honey

*1 teaspoon ground cinnamon

Instructions:

Place raw almonds on a lined baking sheet.

Preheat oven to 400F.

Roast nuts in the oven for about 7 minutes. You will be able to smell the nuts when they are done. Be sure not to overcook!

Egg White Roll-ups:



Ingredients:

*Crepini Egg White Thins (I purchased at Walmart).

*Organic Turkey Slices

*Cheddar Cheese slices

*Spinach leaves

Instructions:

Spread wraps on a plate and add 1 slice of Turkey or meat of choice.

Add half of a slice of cheese.

Add a few leaves of Spinach.

Roll and hold in place with a toothpick.

*Get creative with these wraps! You can use a slice of bacon and tomatoes, or even a hummus spread. You can also fill with Chocolate Hummus for a sweet treat!


Mason Jar Veggie Snacks:


Ingredients:

*Hummus

*Carrot Sticks

*Celery Sticks

-Or-

*Almond Butter

*Apples slices

*Celery Sticks

*Carrot Sticks

Instructions:

Fill your Mason jar about 1/2 full with your Hummus, Almond Butter, or dip of choice. Add your veggie sticks and enjoy!
